Key Purpose Statement:
Responsible for evaluation of all products (physical/chemical) according to requirements of product category and within the timeline. Assisting with controlling Quality and Food Safety within the factory and surrounding environment. Ensuring compliance to the requirements of the Food Safety System and implementation of corrections as required. Reporting any deviations to QA manager.
Key Performance Areas:
- Do daily/weekly verification checks on pH meters, scales, refractometer, cleaning chemicals and thermometer
- Conduct functionality tests on all manufactured products according to the Standard Operating Procedures and responsible for QC releasing all manufactured products
- Recording/capturing all inspections and tests results accurately
- Responsible for recipe additions and recording/trending results
- Reporting any product & test deviations or food safety related matters to QA Manager
- Complying to good laboratory practices and applying clean as you go principle
- Maintain laboratory inventory levels and equipment, ensure no expired chemicals are used
- Prevent wastefulness in the laboratory – use raws, cleaning equipment and disposables sparingly
- Responsible for storage of retention samples and sorting/disposal after required time
- Assist with collecting monthly swabs (hand &equipment), water and air plates samples and submit to external lab for evaluation
- Perform daily and weekly inspections as per schedule and record results of inspections accurately, including weekly Glass & Hard Plastic Inspections
- Issue and control of utensils to factory staff and cleaning equipment as per correct Allergen groups
- Perform micro sampling of end products and submit to external lab for evaluation. Check if all samples were received from production by checking against labels signed off
- Submission of final product for Allergen validation and raw materials for food fraud testing
- Do weekly ATP Swabbing and Allergen verification swabbing as required
- Send water samples for annual chemical analysis and monthly micro analysis
- Conduct monthly mixing audits
- Conduct monthly cleaning audits
- Conduct monthly shelf-life analysis on final products and record test results accurately
Education and Qualifications:
- School: Matric/Grade 12
- Training: Tertiary Qualification in;-
- Food Technology
- Food Science
- Or related disciplines
